Pancake Sundays

Ingredients

Every Sunday morning, my husband and I make breakfast together and one of our favourite dishes is buttermilk pancakes. They are easy to make, taste amazing and are a great way to start off the morning. Happy Sunday 🙂

Recipe for Buttermilk Pancakes

Serves 2 (2 large pancakes each)

  • 175g Plain Flour
  • 1 teaspoon Bicarbonate of Soda
  • 1 large egg
  • 50g butter melted
  • 300ml buttermilk or 300ml milk and teaspoon of lemon juice

*Buttermilk – The first time we made these pancakes, we didn’t have any buttermilk so after searching online we found that you could add lemon juice to normal milk and leave to stand for 3 minutes which works just the same.

How to:

  1. Measure out 175g of plain flour and sift into a mixing bowl

2. Put a teaspoon of Bicarbonate of Soda into the mixing bowl

3. Pour 300ml milk into a measuring jug and then add a teaspoon of lemon juice and allow to stand for 3 minutes (if you are using shop bought buttermilk then you do not need to add any lemon juice)

4. Whilst that is standing, put 50g butter into a bowl – microwave for 30seconds until melted

5. Pour the buttermilk into the mixing bowl and then add the butter

6. Crack the egg into the mixing bowl and whisk the ingredients together (you can use a fork to do this if you don’t have a whisk)

7. Lightly grease a large frying pan and heat over the hob (we use a stone based pan which means that you don’t need to use any oil and is easier to clean)

8. Use a ladle or large spoon and put the mixture into the centre of the pan and allow to expand to the size that you want

9. On a medium heat allow to cook for about 3 minutes until you start to see the pancake dimpling

11. Turn the pancake over for about 30seconds

12. Serve – we use maple syrup to decorate our pancakes but you can use anything you like – chocolate is always a good choice (over Christmas we used Advent Calendar chocolates as toppings and the pancakes tasted amazing!)
